Cooking time - 45 minutes
Ingredients
All purpose flour - 1 3/4 cup
Coconut flour - 1/4 cup
Eggs - 4 no:s
Sugar - 1 1/2 cup
Coconut milk - 1/2 cup
Baking powder - 2 teaspoon
Pure vanilla extract - 1/2 teaspoon
For the frosting
Cream cheese - 8 ounce package of melted cream cheese
Coconut flour - 3 1/2 cups
Butter - 3 tablespoon
Pure vanilla extract - 1/2 teaspoon
Coconut extract - 1/2 teaspoon (optional)
Sweetened Coconut flakes - 1/2 cup
Method
1. Separate the egg white and yolk.
2. Mix the yolk and sugar gradually till well mixed.
3. Now mix the coconut milk and vanilla extract and mix well.
4. Mix the all purpose flour, coconut flour and baking powder and mix well in another bowl.
5. Now add the flour mixture gradually ( one tablespoon at a time) to the yolk mixture till well mixed.
6. Fold the lightly beaten egg mixture and pour in a prepared baking tin.
7. Bake for 20 - 23 minutes in preheated oven at 375 degree Fahrenheit. Bake till a skewer comes out clean.
For the Frosting
8. Blend the cream cheese, coconut flour, butter, vanilla extract and coconut extract in a blender till smooth. You might need to add some sugar if the coconut flour is not sweet enough.
9. Refrigerate the cream cheese mixture for at least one hour. Then spread on the cooled cake.
10. Spread the coconut flakes on the top and refrigerate.
Serve chilled.
