Cooking time - 15 minutes
Chicken ( boneless) - 250 grams ( Washed and chopped into bite size pieces)
Onion - 2 no: (chopped)
Grated coconut - 1/2 cup
Turmeric powder - 1/2 teaspoon
Red chilly powder - 2 teaspoon
Black pepper powder - 1/2 teaspoon
Ginger - 1 teaspoon ( minced)
Salt - to taste
Curry leaves - few
Coconut oil ( or any vegetable oil) - 2 tablespoons
1. Marinate the chicken pieces with chopped onion, ginger, grated coconut, turmeric powder, red chilly powder, black pepper powder and salt.
2. Let it rest for at least 1 - 2 hours (the more the better)
3. Heat coconut oil in a pan, fry the curry leaves and put the chicken marinate in it and stir frequently.
4. Cook till the chicken is tender.
