There are many methods of making khoya. One is the traditional method of boiling the milk until it looses all its moisture and soldifies. For making sweet khoya a combination of milk powder and ghee or a combination of curd and sweetened condensed milk can be used. The recipe mentioned below used ricotta cheese and is really quick and easy. I prefer this one as a. its quick and b. it can be used in both sweet and savory dishes.
Makes - approximately 200 grams of khoya
Ingredients
Ricotta cheese - 425 grams
Clarified butter/ ghee or oil - 2 tablespoons
Method
1. Take a heavy bottomed non stick pan and heat the ricotta cheese and ghee in medium to low flame till all the moisture is dried up. Stir in between.
After 20 - 25 minutes you will be having a nice ball of solidified milk ( khoya ) in your pan.
Homemade Khoya is ready. Once cooled it can be stored in refrigerator in a air tight container and will saty good for at least 5 days.
