Makes - 20 - 25 Nan khatai
Cooking time - 25 minutes
All purpose flour / maida - 1 cup ( I have used the unbleached one)
Sugar - 3/4 cup
Cardamom powder - 1/2 teaspoon
Baking powder - 1/2 teaspoon
Salt - just a pinch
Ghee / clarified butter - 8 - 10 tablespoons
1. Mix the all purpose flour, sugar, baking powder, cardamom powder, salt and ghee ( little by little till a smooth dough is formed.
2. Cover and refrigerate for an hour. This step is completely optional.
3. Bake in a preheated oven for 12 - 15 minute at 350 degree Fahrenheit or until the sides have started browning . For a more brown color leave it in the oven for 2 - 3 minutes. Cool them in a wire rack.
This can be well stored in a air tight container for up to a week.
