Pappaya halwa is delecious, nutritious and easy to prepare.
Ripe papaya - 4 cups cut into cubes
Sugar - 3/4 cup
Milk - 3/4 cup
Clarified butter / ghee - 1 1/2 tablespoon
Almond - 1 tablespoon (Sliced)
Cardamom powder - 1/2 tspn
Method
1. Roast the almond slices in in 1/2 tablespoon of ghee.
2. In a heavy bottomed pan; add the papaya and suagr and cook together until the papaya mashes and gets well combined with the sugar.
3.Stir in the milk and simmer with the papaya until all the milk condenses to form a thick mixture. The
halwa would become thick and become sticky leaving the sides of the pan. The milk and water content should be completely evaporated and will look glossy.
4. Add a tablespoon of ghee and add the roasted almond slices.
Serve hot or chilled with a scoop of vanilla ice cream.
Notes
1. Instead of almonds you can also add roasted cashews and raisins.
