This is a great dish for a party when you are searching for a curry but doesn't have time to spend cooking it. The best part is this curry doesn't use any oil at all. You can use butter if you prefer but it also tastes perfect without it.

Ingredients
Potato - 2 medium (peeled and cut to cubes)
Carrot - 2 ( cut to cubes)
Green beans - 1/2 cup (chopped)
Cauliflower florets - 1/2 cup
Onion - 1 ( medium) (chopped)
Tomato - 1 ( medium) (chopped)
turmeric powder - 1/4 teaspoon
Dried red chilies - 5 no:s ( according to taste)
Fennel seeds - 1 teaspoon
Cumin Seeds - 1 teaspoon
Garlic - 1/2 teaspoon ( minced)
Ginger - 1 teaspoon ( minced)
Salt - to taste
Coriander leaves - to garnish
Method
1. Soak the dried red chilies in water for 10 minutes and grind it along with ginger, garlic, fennel seeds and cumin seed along with little water.
2. In a pressure cooker, add the potatoes, carrots, beans, cauliflower florets, onion, tomato, turmeric powder, ground red chilly paste and salt.
3. Cover and cook it on medium flame for 3 whistles or till the vegetables are done.
4. Garnish with chopped coriander leaves and serve warm.
