This is an Indian version of the masala omelette with onion, mint leaves, coriander leaves, ginger, spinach leaves and green chilly. Its a quick almost prepared in jiffy but quite filling as well.
Eggs - 4 no:s
Onion - 1 small ( Chopped)
Tomato - 1 small ( chopped)
Mint leaves - 1/4 cup (chopped)
Coriander leaves - 1/4 cup (chopped)
Spinach leaves -1/4 cup (chopped)
Ginger paste - 1 tspn
Green chilies - 2 no:s ( chopped) ( adjust according to spice )
Red chilly powder - 1/2 tsp
Turmeric powder - 1/4 tspn
Cumin powder - 1/4 tsp
Salt - to taste
Pepper powder - a pinch
Oil - 2 tsp
1. In a bowl, break the eggs and add all the above ingredients except oil and beat till frothy. Using a hand mixer will be best.
2. Heat oil in a non stick pan, pour the mixture and cook both sides till done.
Serve warm on a busy day
